Powdered sugar is
granulated sugar (from sugar cane or sugar beets) that has been ground into a fine powder.
It also goes by the names confectioner's sugar, icing sugar, and/or frosting sugar.
Powdered sugar is very white in color. It has a soft texture that is easily sifted, like flour.
Powdered sugar is available in various grades of fineness (4x, 6x, 10X, 12x). The more X's, the more finely the powdered sugar has been ground.
Because of the added surface area, the higher, finer grinds dissolve more quickly.
In addition, powdered sugar can be susceptible to water and odor absorption. As a result, it should be stored in a clean, dry and temperature controlled environment, like our warehouses at Cooperative Purchasers.
Uses of Powdered Sugar
For home use, powdered sugar typically contains an anti-caking agent (either
cornstarch,
calcium phosphate, or
wheat flour) which helps prevent clumping.
Upon cooking, the added cornstarch in some powdered sugar can cause thickening, which should be considered when incorporating it into recipes.
Powdered sugar is available for industrial use both with and without the added anti-caking agents.
For industrial food manufacturing, powdered sugar is used in products including:
- icings
- sauces
- frostings
- coatings
- beverages
- decoration
... and numerous baking applications, especially because it can dissolve quickly.
For sweetening beverages, powdered sugars without anti-caking agents are used.
Because of its fine texture, powdered sugar is also delightful for sprinkling or coating baked goods for decoration and extra sweetness.
