Soy Flour

Soy flour is made from roasting soybeans and grinding them into a fine powder.

The result is a high-protein flour that's perfect for alternative food products, for distributors focusing on the health-food market, and for those who market toward consumers on a gluten-free diet.

Soy flour also adds moisture to baked goods, provides the basis for some soy milks, and even reduces the fat absorbed into fried foods.

Types of Soy Flour

There are three types of soy flour available today:
full-fat, lowfat and defatted.
Full-fat Soy Flour
Full-fat soy flour contains the natural oils that are found in the soybean. It has a richer flavor and is perfect for retaining moisture in baked goods.

Low-fat Soy Flour
Low fat soy flour contains about 1/3 of the fat of the full fat version. It has a milder taste, and a higher protein content than the full fat version.

Fat-Free (Defatted) Soy Flour
Defatted soy flour contains minimal fat or oil. It's very mild flavor makes it ideal for substitution into goods that usually rely on traditional flours.
